Sabudana Khichdi is a light-weight and easy to prepare recipe that is rich in nutrition and is widely consumed in breakfast during the festive months such as Sawan month (Shravan month) and Navratri. Sabudana Khichdi is made with Sabudana, also known as Sago and also contains peanuts and potato. For a pinch of taste, many also add a few spices to the dish.
Here's how you can make tasty Sabudana Khichdi to enjoy during this Sawan month.

- 1 cup of Sabudana (Sago)
- 1 Potato (Regular size)
- 1 cup dry roasted peanuts
- 1 tsp cumin seeds
- 1 tsp lemon juice
- 1 tbsp oil
- 1 finely chopped green chilli
- 1 tsp sugar.
- Rock Salt (Sendha Namak) as per taste
Wash out and clean up Sabudana with water.
Soak them in water for about 20 minutes or so and then remove water.
Cover them and keep overnight.
Now add sugar and keep aside.
Now in a separate utensil, boil potato and then peel and chop them off.
Now slightly crush/grind peanuts in the grinder.
Now take a pan and heat up oil and add cumin seeds. Allow them to crackle.
Then add potato, the semi-ground peanuts, mix up them with Sendha salt and saute for a minute.
Add Sabudana and stir well on low flame, for about 2 minutes.
Turn off the flame, cover it and keep it aside for about 5 minutes.
Garnish with coriander leaves and add some lemon juice.
And aloha! Your Sabudana Khichdi is ready to serve.
