Aam Panna

Ingredients:

2 medium-sized raw mangoes

1 cup sugar (adjust according to taste)

1 teaspoon roasted cumin powder

1/2 teaspoon black salt (kala namak)

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper powder

A handful of fresh mint leaves

Ice cubes

Water

Instructions:

  1. Wash the raw mangoes thoroughly and then boil them until they become soft. Alternatively, you can pressure cook them until they are soft and pulpy.
  2. Once the mangoes are cooked, let them cool down. Then peel off the skin and remove the pulp from the mangoes. Discard the seeds.
  3. In a blender, add the mango pulp, sugar, roasted cumin powder, black salt, salt, black pepper powder, and fresh mint leaves.
  4. Blend everything together until you get a smooth mixture. You can adjust the consistency by adding water according to your preference.
  5. Taste the mixture and adjust the sweetness and saltiness according to your taste.
  6. Once the mixture is well blended and adjusted to your taste, strain it through a sieve to remove any fibrous bits or residue.
  7. Transfer the strained Aam Panna into a pitcher or jug and refrigerate it until chilled.
  8. Serve the chilled Aam Panna in glasses with ice cubes. Optionally, you can garnish each glass with a sprig of fresh mint leaves for added freshness.
