Potato Bhaji

Potato Bhaji

Ingredients:

  • 500 gms Potatoes, chopped into cubes
  • 2 Onions, chopped
  • 1 ½ Tomato, finely chopped or pureed
  • 1 tsp ginger garlic paste
  • ½ tsp Mustard Seeds
  • 1 tsp Salt
  • ½ tsp Turmeric Powder
  • ½ tsp Red Chilli Powder
  • 1 tsp Cumin Seeds
  • 5-6 Curry Leaves
  • A pinch of Asafoetida
  • 1 tsp oil
  • 1 tsp fresh Coriander, finely chopped for garnish

 

Steps to prepare Potato Bhaji:

  1. Heat the oil in the deep pan. Add a pinch of asafoetida and let it splutter.
  2. Add a teaspoon of cumin seeds, and ½ tsp of mustard seeds, and roast it until it turns dark brown.
  3. Next add curry leaves and let them crackle.
  4. Now add chopped onions and sauté until golden brown.
  5. Add a spoonful of ginger garlic paste and fry it until the raw smell is completely gone.
  6. Add chopped or pureed tomato and sauté it until they are completely cooked and all the ingredients are mixed together.
  7. Now add ½ tsp of turmeric, ½ tsp of red chili powder, and 1 tsp of salt or as per your taste, and sauté it well.
  8. Add chopped potatoes, mixed them well, and cover them with a lid. Let it cook on slow flame until it’s completely cooked.
  9. Sprinkle the freshly chopped coriander on it and serve it hot with puri, paratha, roti or luchi.
