Panjiri Ladoo

Ingredients:

1 cup whole wheat flour

1/2 cup ghee (clarified butter)

1/2 cup powdered sugar (adjust according to taste)

1/4 cup powdered edible gum (gond)

1/4 cup chopped nuts (almonds, cashews, pistachios)

1/4 cup desiccated coconut

1/4 cup poppy seeds (khus khus)

1/4 cup melon seeds (magaz)

1/4 cup raisins

1 teaspoon cardamom powder

 

Instructions:

Roasting the Edible Gum:

  • Heat a tablespoon of ghee in a pan on medium heat.
  • Add the edible gum and fry until they puff up. Remove and let them cool.
  • Once cooled, grind them into a coarse powder and set aside.

Roasting the Flour:

  • In the same pan, add the remaining ghee.
  • Add the whole wheat flour and roast on low to medium heat until it turns golden brown and gives a nutty aroma. This might take about 10-15 minutes.
  • Stir continuously to avoid burning.

Adding the Nuts and Seeds:

  • Add the chopped nuts, desiccated coconut, poppy seeds, and melon seeds to the roasted flour.
  • Roast for another 5 minutes until everything is well combined and aromatic.

Combining Ingredients:

  • Turn off the heat and let the mixture cool slightly.
  • Add the powdered edible gum, powdered sugar, raisins, and cardamom powder to the mixture.
  • Mix everything well so that all the ingredients are evenly distributed.

Shaping the Ladoos:

  • While the mixture is still warm, take small portions and shape them into round ladoos.
  • If the mixture feels too dry and is not binding, add a little warm ghee to help shape the ladoos.

Storing the Ladoos:

Let the ladoos cool completely before storing them in an airtight container.

Tips:

  • Adjust the amount of sugar to your taste.
  • You can add or substitute other nuts and seeds as per your preference.
  • Ensure to roast the flour well to avoid a raw taste in the ladoos.
