Ingredients:
1 cup whole wheat flour
1/2 cup ghee (clarified butter)
1/2 cup powdered sugar (adjust according to taste)
1/4 cup powdered edible gum (gond)
1/4 cup chopped nuts (almonds, cashews, pistachios)
1/4 cup desiccated coconut
1/4 cup poppy seeds (khus khus)
1/4 cup melon seeds (magaz)
1/4 cup raisins
1 teaspoon cardamom powder
Instructions:
Roasting the Edible Gum:
- Heat a tablespoon of ghee in a pan on medium heat.
- Add the edible gum and fry until they puff up. Remove and let them cool.
- Once cooled, grind them into a coarse powder and set aside.
Roasting the Flour:
- In the same pan, add the remaining ghee.
- Add the whole wheat flour and roast on low to medium heat until it turns golden brown and gives a nutty aroma. This might take about 10-15 minutes.
- Stir continuously to avoid burning.
Adding the Nuts and Seeds:
- Add the chopped nuts, desiccated coconut, poppy seeds, and melon seeds to the roasted flour.
- Roast for another 5 minutes until everything is well combined and aromatic.
Combining Ingredients:
- Turn off the heat and let the mixture cool slightly.
- Add the powdered edible gum, powdered sugar, raisins, and cardamom powder to the mixture.
- Mix everything well so that all the ingredients are evenly distributed.
Shaping the Ladoos:
- While the mixture is still warm, take small portions and shape them into round ladoos.
- If the mixture feels too dry and is not binding, add a little warm ghee to help shape the ladoos.
Storing the Ladoos:
Let the ladoos cool completely before storing them in an airtight container.
